After having the opportunity to try the world’s finest absinthes at LF05, I thought I would go back and try some leftover samples of all three J.ades to see how they compared. I also used a rather mediocre Pontarlier HG as a control. I still can’t detect the burnt flavor. But I was overwhelmed (if that’s the right word) by the completely dull, bland and downright insipid taste of the J.ade. They also possessed what I would describe as an overcooked funkiness (Jack - is that what you mean by burnt?) Even the middling HG shined by comparison. Frankly, if J.ade is what absinthe is about, I’ll go back to Scotch and gin with occasional forays into bourbon and Chartreuse. And beer.

No, that's what I now refer to as Sewer™.

If you want to know what I mean by burnt™ take a bottle of arak and smell it; take a bottle of any Swiss LB and smell it; take a bottle of Kubler and smell it; and finallly take all three bottles of Jade and smell them. There is a character that is in all of them which is not in most HGs nor in oil mixes.

The 1950's Tarragoner I got to sample was burnt™, but the other (preban) vintages were not.

I often post something then delete the whole thing after I ask my self "what's the point here" ('cause I have that ability).

I almost responded in this thread several times... to the extent of the unfairness of comparing small batch stuff to full scale commercial, taking pot shots at the "big guys" who are somehow always money grubbing conspiracy louts, or the played out discussion of burnt... but you know what? In all honesty I don't really give a rats ass.

As for Jade. I'm no Tedd-o-phile but...
I was at LCLF and I drank Jade when there were several bottles of HG left. Why? Because it's OK.
Not amazing.
Not stupifying,
But a hella lot better than a lot of HG's, and a damn sight better than any other commercial offerings.
I'm sick of listening to the conspiracy theories.
I remember when all there was to drink was funky Deva, bitter c-zech, and wayyy overpriced Bettina Bleues.
I remember the Moonman selling his not quite traditional absinthe at $200/liter... and people raving about it (have you tasted it recently, bleh).
I remember when Un Emile came out. It topped the charts. Sure it smelled like fish and had a weak louche, but at least it tasted "right".
Then the Fudgerolls made a breakthrough.
Finally Jade and the new era of legal swiss bleues.
There are no leaps and bounds, just slow evolutionary improvements.

Some people have done a shitload to forward the cause of good commercial absinthe. Without their efforts, we'd be drinking absenta and asbinth. I pray to whatever higher powers that someday they all make a shitload of money. They deserve it.

I'm sick to death of people moaning about how HG is soooooo much better than anything commercially available. Great. But that doesn't really help the 99.99% of absinthe drinkers with NO access to illegal hooch.

I understand that those in the "know" want to be critical. I'm all for that. Our response, as informed consumers, might actually help improve products and educate the newbies.
Be critical and objective.
Just kill the whole jackass commercial bashing. I'm sure that Peter is pretty busy these days driving his new Ferrari to and from one beach house to the next. He probably doesn't have a lot of time to read through our boring posts, due to the hours he spends entertaining supermodels and gambling with shieks.

Being one of those who gets to taste a HG as a rare treat, the vast majority of what I drink is CO. The Fougerolls, and the J.ades represent the best of what I can consistently find and buy. The HGs are great when they can be had, and rare enough, for me, that they get saved for special occasions (or the occasional small DCLF).

I feel that my $ is well spent on CO, and LDF sees the bulk of my Absinthe budget. On the few occasions when I have had the opportunity to purchase HG, the funds, or the timing just isn’t right, CO is always there when I am ready to buy.

And I’m quite happy that its there, and that someone out there has made an effort to do it well.

How can people keep missing this?

NO ONE MINDS SOMEONE MAKING MONEY DOING SOMETHING THEY LIKE.

We all don't get together wishing Ned, PaPa PV, and all those cute little suisse LB farmers desperate poverty.

i appreciate what has been said and don't feel personally bashed by anyone.

all i want people to know is that we all want the same thing. i just happened to be in a pretty interesting situation where i can stick my hand into the legal works once in a while and goose it, and i'm not always happy with what comes out.
but it certainly is a start and i'm having a good time, if not sometimes frustrated by the imaginative aura that we are raking in the mega-dough.
with our marketing strategy, we are swimming upstream right now...

T.A.B. has always had an open-door policy at combier and anyone who wants to come by when he is there can, and pretty much see everything he is doing...ask another commericial producer to do that...

Just to add a bit of useless clarity, I never mentioned or am even aware of any "conspiracy" theories. I do not object to TAB or anyone else earning what they can and I do recognize that the quality of CO has increased markedly. On the commercial side, I quite like what Phil has done, not because he has turned out great absinthe, at least yet, but because he has been honest that his experiments are just that and is inviting the public -- with full disclosure -- to give them a try.

As for trashing J.ade, I actually defended it against Jack's burnt comments although I will give it the sniff test Jack recommended. Was the J.ade as good as the best HG? No, but I never claimed that it was a fair comparison, just something to try.

There comes a time to put away the sniping and rivalry and just have fun. That's what LFs are supposed to be about and that's what I was doing over the weekend.

So all you Ned-haters and Tedd-o-philes, lighten up and have a drink.

I've found most absinthe tasting is relative to what else you've been drinking. I thought Muse de France was fairly decent until I tasted it side by side with Jade- the only REAL Burnt™ absinthe. Just the one experience makes me taste a lack of quality in MdF now.

Same thing happened with Jade- the only REAL Burnt™ absinthe- I was perfectly content with Jade- the only REAL Burnt™ absinthe until I tasted it side by side with some HG. Now all I taste in Jade- the only REAL Burnt™ absinthe is that funk.

I didn't like it even before having really good HG. My bottle smelled horribly of tails. Others who tried Jade- the only REAL Burnt™ absinthe from my bottle said it tasted different then what they had. A quality issue like this is my biggest complaint.

JL 1901 Absinthe Supérieure is a classic vintage-style absinthe, balanced and crisp, with a stimulating herbal aroma and a smooth, lingering aftertaste that recalls the splendor of the Parisian cafés during the Belle Époque. It should be noted that when a large cache of the pre-ban original was discovered in recent times, a few bottles were found to be in a remarkable state of preservation, retaining much of their original color and freshness. Those who have been fortunate enough to taste these were unanimous in their remarks as to the striking similarities between the vintage bottles and the JL 1901 Absinthe Supérieure pre-ban clone.

'course not: most preban is aged for a lot longer.

Didn't exactly taste like PF1914 Très Verte either. Couldn't, because it's clear that the green anise in PF1914 was a lot better and even the wormwood was very different (more 'woody' than fruity in the real PF, and no, I don't think that's the age, because I have smelled some A.a. with that character in the VdT). I guess it'll take a much larger market for those two herbs and decades for people to be able to produce herb sources that good through years of selection (mind you, I haven't smelled Kirk's herbs, even though I've heard Many Good Things about them).

The PF1901 I drank was a credible attempt at making something similar, though (except that the slightly nutty Jade aftertaste is nowhere to be found in PF, of course). Whether other batches than the one I tasted were as good is something I don't know, though.

Another thing: that PF1901 is definitely not built to last as long as the real PF was. Like many wines it's built to be a bit too pleasant too soon for that. So are other absinthes, but then these don't claim to be repros...

I have racked 10 yr old starka from an oak cask. If I put the spirit into bottle and let it sit for 10 yrs, I would have gotten a spirit sittin' in a bottle for 10 yrs, not starka.

Opinion of Favre is more credible than Sixer's. He actually had been to Edouard Pernod distillery and talked with the people workin' here.

Beer and wine is not alcohol from distillation, so outta question. I do age my wines and my beers in bottles, butt they are not alcohol, they are wines and beers. Beers as a matter of fact-that ya know fer xure, are being refermented (conditioned) in a bottle.

Whisky put in a bottle stops its aging. Period. Every whisky maker, drinker, pro will confirm.

Reminds me of when I drank some Hoser whisky with my neighbour...he had a "10 year old" bottle that he had for 20 years. He thought it was now a "30 year" bottle. Nope. Was exactly the same as a 10 year.

I still don't agree. Try a "10 year" bottle of Whiskey that has been in the bottle for over 100 years. It will not be the same...many variables...

Felix you have just confirmed that a 10 yr old stamped bottle, stored for 20 yrs, is still a 10 yr old.

How can I try a 100 yr old bottle if such has never been found and if it has, it will be completely fucked up from aeration? Markiss Liar was sellin' Edouard that has evaporated till 49%, it wuz completely fucked up, not that Markiss Liar makes fucked things or things he sells are not worth their price as they are fucked up, it was that Edouard has evaporated tooo fuckin' much and wuz fucked all the way, mebbe for the louche. Mind ya, whiskey/whisky was bottled at a mere 50 plus, add evaporation and what's up? I have had Wild Turkey 25 yrs, drunk some, left a sample in a 50ml-it went so fucked up like anythimn' apart from Absinthe Syndicate™. Sinked.

For a moment, I have to agree with GTO. There is Scotch whisky, there is Irish whiskey nad™ there is American whiskey (Tennessee) and bourbon whiskey. What else should be counted? I have never had a Hoser whisky/whiskey.
