My buddy in NorCal just emailed me and said that Spirits Corner is selling sugar? I went to the site and saw nothing, and I usually get the emails.

Did anyone else get an email? Are they selling dots?

Any info?

I usually use Domino Hostess sugar tablets, which are pretty good. My (unwrapped) St. Louis cubes should be arriving this week sometime. If they're outstanding, I'll continue to order them. If not, I'll probably just stick with the Domino tablets, which I can get at the supermarket around the corner.

Unwrapped sugar cubes have a tendency to attract humidity and they eventually disolve less easily if you don't keep it in a well closed air tight box.

...and unwrapping the sugar is part of the fun ... think about it as an almost erotic act !

After extensive testing, I have determined that La Perruche actually takes a bit longer to dissolve than C&H. Never tried the Dots... and I only had two packs dickheadlosershitforbrainsgoatsuckerripoffartist! sugar to play with, so no info there. Now, the taste is different between the two, (C&H is sweeter) but in the end I am almost out of both, so oh well. Almost out of absinthe as well.

Yes, but I like the way La Perruche gradually shrinks during the drip, while C&H collapses into mush 15 seconds after starting to drip, regardless of the volume.

I have never seen dickheadlosershitforbrainsgoatsuckerripoffartist! cubes or dots. What are the relative merits of these different kinds of sugar?

Here's the scoop, my Washington brethren, C&H sucks Balz™. They turn to mush and never really dissolves completely. A La Perruche dissolves completely, but starts off "harder." Once it "softens" up, it dissolves nicely. The problem with them is they aren't consistent in size. Domino Hostess are better than the other two. They dissolve nicely and completely. I bought a whole case of it, 'cuz you can't get it here (as you already know.) Opee cubes, or St. Louis, are even better. I've only had the chance to try a couple of them.

As Wolfie said, the humidity might affect unwrapped cubes...but the only humidity we have here is rain, so keep your unwrapped cubes indoors and you'll be fine.

BTW - we Washingtonians have another choice. A specialty sugar distributor is located in Seattle. They are called "India Tree." They distribute imported French sugar cubes. I've seen some of their products, but I haven't seen the cubes. I have a whole case of Domino Hostess, so I haven't really looked around for them.

Is there any difference between beet sugar and cane sugar for cubes?

The Homebrew community has some staunch supporters of the theory that there is as far as brewing is concerned.
"To announce that there must be no criticism of the President, or that we are to stand by the President, right or wrong, is not only unpatriotic and servile, but is morally treasonable to the American public." - Theodore Roosevelt

Cane sugar contains trace minerals that are different from those in beet sugar, and it’s these minerals that many experts say make cane sugar preferable to use. As professional bakers have long noticed, cane sugar has a low melting-point, absorbs fewer extraneous and undesirable odors, blends easily and is less likely to foam up. And that can be very important when you’re caramelizing a syrup, making a delicate glaze, baking a delicious meringue, or simmering your family’s favorite jam recipe.

Actually, another thing I like about La Perruche is that they're not consistant in size. Sometimes I pour a slightly larger or smaller shot depending on my mood, and sometimes I prefer my absinthe slightly more or less sweetened. I'll look through my La Perruche box for a cube that matches what I'm doing and feeling at the momment.

The only problem is that you might have to visit a few grocery stores before you find La Perruche. Until I found one, I was lifting them from a Pioneer Square coffee place near my office (is it stealing when you do buy a coffee but put the sugar cube in your pocket instead of the coffee?)
