It's ok. Kinda pricey and I probably won't get it again but it's not bad. Next I'll try Ivy City gin also made in beautiful downtown Ivy City, DC.

UPS man arrived with a large box. Me, scratching my head and wondering what it was. The man sez, "I think its alcohol." Well then! sez I, gladly scribbling on his electric whatchamacallit!

 

Now I'm gratefully sippin' on some High West Campfire Whiskey. Nice, smokey and smooth. An interesting blend of Bourbon, Rye and Scotch. Makes my day -- heck, my week.

Which one? Hibiki comes in a 12 Year and a "no age" version. I have both. Drank the 12 Year last night. Both are good. The 12 Year is measurably smoother.

My friend Fred croaked a few nights ago. Funeral Saturday with reception at the Prole house. Lots of Rye has already been consumed (Absinthe and Fig spirits too), Interestingly, his wife's son is a fermenter interested in going further. He'll be bringing me some home made Meade next week.

I bought some of those Pom fruit juices the other day (Pom coconut, Pom hula). I was going to use them as mixers for some rum cocktails.

Didn't end up using them for that.

Decided to just pop one open yesterday afternoon. Didn't realize they were carbonated. Didn't realize they contained alcohol.

Didn't realize it was 9 months past its expiration date and fermenting.
There's just too much time to kill between all my mistakes.

I'll stick with Absinthe -- lots of it today.

 

Been picking figs. The tree is especially generous this year but I'm allergic to the latex that oozes from it so picking them leaves me itching like hell. Absinthe helps. Fortunately I have enough to drown myself.

People say absinthe makes you take a trip, but that's just not true anymore, that was like 10 years ago.

As far as Thump, I don't care who anyone votes for, as long as they have carefully analyzed the facts on the ground and don't leave the hard work of listening and thinking about what is actually true to someone else.

I did not realize that absinthe contained a political ingredient.  Sounds like it would give me heartburn.  I'll pass.

None of the above ought to be on the ballot for all elections, no kidding.

What happened is, we (family) moved about 17 months ago and the internet connection was lost for a couple of weeks.

I decided to make the temporary hiatus permanent.  I made no posts anywhere in all that time, although I did continue to read here and at FV.

There was bad flooding around here a couple of weeks ago and someone inquired about me (I assume there was a connection, although it was not stated) in a private area at FV.

So I decided to break my silence and I posted a response.  Then the place apparently crashed.  I wonder if anyone will bother to report it.  I know I won't.

I was not directly affected by the flooding, which was mostly a ways north of where I am.

I never concern myself with absinthe anymore.  Don't make, buy, obtain or drink it.  I think I had some last Halloween.  It gives me acid reflux.  I have learned that coffee is probably even worse - haven't given that up completely but I have cut back.  I went on a diet and lost 25 pounds.  I shaved my head.  I started going to church, but not religiously (in any sense).

I'm excited about mead.

Dog not included.  That's a new dog.  My faithful dog died of cancer this summer, left quite a hole in my soul, but she sent me a pair to replace her; they look like her, same breed and all.  Within a week of her passing, we got an out of the blue invitation to rescue the pair from a divorce settlement that would have sent them to the pound.

It would please me to speak more of mead, if there is any interest.  If not, I might do it anyway.

I agree about none of the above. Glad you weren't flooded out.

 

Mead is interesting -- or can be. I met someone who makes it and what I sampled was good -- like wine but betterer.

 

I've been making fig  preserves -- figs, raw sugar (Panela dolce de El Salvador) and ec-1118. Got some bubbling like mad a week along.

 

I haven't been keeping up with FV very closely -- hadn't noticed it was down. I have been concerned about you. Heck, any of us can be gone in a moment. Glad and relieved to see you posting. Take care.

You, like others, have a theory.  The best mead in the world is made in Poland, or so I'm led to believe.  Should be some right next door at a lower cost than I would incur, should you care to risk disproving your theory to nobody but your ownself.  Look for "Apis".  Mead is ranked in Poland according to honey/water ratio.  More honey obviously amounts to richer flavor and higher price.  The top of the shelf Apis is named after some famous queen and/or hero (I forget).  Jadwiga or some such.

I've been wanting to make mead all my life, but every time I started reading up on it, I was was struck by the fact that it's a long time between the pot and the glass.  Years, maybe.  And I did not think I had years to wait.  Looking back, I had plenty of them, but they're easier to count that way.  So I made beer, quite a lot of it, for a while in the 90s, and gave that up when absinthe caught my attention.

Recently a video game (Skryim - mead is everywhere in the game) piqued my interest again, and going to the Internet, I found a quick and dirty process - mead in four months, maybe.  So I whipped some up.  And yesterday, I made Sima (Finnish variant), which Bruno told me about a couple of years ago on FV.  Sima is ready in days, but has devolved into fizzy lemonade, pretty much, and has almost no alcohol.  But I have found a kicked-up Sima process - it does have honey, is ready in ten days, and has the alcohol content of your average beer (5% or so).  Both jugs are fermenting away.

A terrible curse. You have my condolences.

 

I, like Tibs, prefer absinthe above all else. I also love good gin and whiskey -- especially rye. I also like fruit brandies. I tend to stick to properly distilled beverages because they are easier on my system.

 

I offered to clean up the mead I tried and see what resulted but I haven't heard from back the artisan.

Should be an interesting distillate.  Ted made a Berger clone from distilled champagne years ago and it was really special.

I'm envious of your figs; I've read your posts about them.  Everybody around here had one or more fig trees when I was a boy.  Today, people don't grow anything but debt and obnoxious children.

The acid reflux is under control now that I've almost completely given up absinthe and hard liquor in general.  And coffee.  It used to be a daily thing; now it only kicks up on the days I have more than one coffee.  Sometimes even one will do it.  Absinthe brings it on every time.

I recently discovered, at World Market, a bottle of Old Tom gin.  It's a style, not a brand.  Sweet gin.  Jay had told me it was the original gin for Ramos fizzes, and to do it right, it has to be Old Tom.  Only thing is, the style was defunct for many years, but recently a handful of distillers have started making it again.  It makes a fine fizz indeed.  The brand I found is Hayman's.  Not terribly expensive for good gin.  So much cream and eggs in a Ramos, that cocktail won't engender the stomach problems, if I only have one or two drinks, and it's a pain in the ass to make more than that anyway.

Copper Fiddle Distillery makes an Old Tom. Or at least a Tom Gin.

According to the distiller there the designation simply refers

to a house gin in pre-prohibition times, with no real consistency

between one house style and the next. Or so he averred.

What separates Old Tom from other gin is that it is sweetened in the bottle, or Jay told me and so I've read.  I believe it, because the cap on the bottle has become harder to twist because of sugar accumulation.  In other words, it's not "dry" gin.  Cellar full of mead.  Now that's interesting.

One of those poseurs.  I drive a 15-year-old Subaru, but I was thinking about getting a "Save the Bees" license plate.  No bees, no mead.

I wouldn't turn down the drink, though.  Once my wife and I were on route from Seattle to New Orleans on a train, which stopped in Denver on a December day.  Snow on the ground, cold crisp air, and the delay was long enough to explore the area close to the station.  We found a brewpub that had a fireplace, and mead.  I had a glass.  A cherished memory.

Can't say I have, but it's much in the literature, going back to ancient times.   There's a mead variant called "braggot" that has barley malt in it.  Not to be confused with braggart - that would be Ragnar the Red, and you see what it got him.  And we know hops have long been associated with beer.  I wouldn't put hops into mead, but it might be nice with "soft" hops - English varieties such as Fuggles or East Kent Goldings.  Probably in olden days people put hops into lots of drinks for preservative or medicinal reasons.  I was musing about black currants (so nice in lambic), but it seems that they are so acidic as to be very problematic in mead.  I might get some anyway, and just eat them, because they are a "super food" and I just flat love the flavor.  I found a source in NY a couple of days ago.  I just learned this week that culture of black currants all but died out in the U.S. because of a belief that they can harbor a fungus that destroys pine trees, with resulting laws.  Big money in pine trees - currant farmers don't have a chance against forestry conglomerates.  The outfit in NY fought the law, and for once we can't say the law won.  Lots of assholes in the U.S. sell raisins labelled as currants - there ought to be a law against that.  "Currants" have a very negative rating on Amazon as a result.  You pay for this, and they give you that, as Neil Young used to say.  When in doubt, always determine the Latin name of the species.

in my yard. A few fewer gooseberry bushes.

And one glorious intersection of the two.

I am not currantly disposed to travel, but if I were, there are few places I would rather go.  Mead in the cellar and black fruits on thorny bushes do get me hopped up, not to mention skeps on the landscape like bumps on a toad.  Learned a new word this week - skep.

Yeah, there are raisins known as currants, but there are people selling them as as "black currants", and that they are not.  There has to be a niger in the woodpile for it to be what true seekers are after.

The sima is clearing up nicely.  It looks like honey again.  For a while it looked like the mead, which is to say tan and turbid, cause of the one-celled Hammond organisms hard at work.  Put an ear to the jug and you can hear the sizzling up in there.  Sounds like bacon frying. 

Sima tasting a week from now.  Mead, maybe at Yule.  I might make a label.  Maybe with a Krampus.
