Cayenne pepper is an interesting idea, especially if I still lived in the Southwest.

I like the idea of adding something that are local to your environment. I'm using Smoked Alderwood Malt and Raspberries in my next attempt. Red Currants are also local...

It's pre-louched, actually. But I believe that has more to do with chill-haze and pectin.

Juniper is listed as an indispensible ingredient of Kozicowe*, Koestritz, Fredersdorf, Mannheim. Haven't given it a try yet.

For the long-forgotten English Purl, red gentian is also called.

All zests should be allowable. No idea 'bout orris.

*Using juniper berries as the main ingredient of beer was very widespread in northern, central and north-eastern Poland, but nowadays survived only in the Kurpie area (central-NE Poland, Mz), where it is called psiwo jałowcowe or psiwo kozicowe

I've had absinthe with juniper in it - pretty good.

Also with Dictamnus albus.

Burning Bush.

With an appropriate label, that could be a big seller.
You might be surprised how well old goat sausages are able to stand up to the heat.

Thanks Artemis, maybe next year, I caught some sort of blight that keeps killing my pontica plants, I'm harvesting about 10 percent of what I harvested 2 years ago. The extension agent is supposed to come out today and take samples to send to V Tech. I'm hoping I can fix it.
