As with whisky, absinthe embraces many different styles and this enables you to select the right one for every occasion.

We have some exciting news for lovers of rare absinthe. We have unearthed a trove of absinthes from the Emile Pernot distillery which are no longer under commercial production, such as Maitresse Rouge, 1797 and even a stash of L'Artisanale. We also have a number of early versions of our Brut d'alembic."

Interestingly, the last time we have heard about L'Artisanale was regarding two or more bottles available from Caves du Roi, not a stash. MR and 1797 were considered epuissée for more than a few years as well.

Speaking of the truth, not to change the subject, I do Know something about L'Artisinale that is not commonly known. Peter shared it with me but I think it was in confidence. I told the maker and Artemis. If Peter wants me to share it, I will, but I would rather hear him say it.
I Have to say though that I expect the news to be used as a pawn with the hoped for outcome being: "See, this is why nobody can make tasty, fragrant absinthe".

The thing is; the revelation means nothing, if it's supposed to be an excuse for why nobody makes the good tasting fragrant absinthe commercially it's not. The revelation means nothing, just sloppy testing. I hate when small details are used as pawns to further confuse or obfuscate.

That wasn't the point of sharing that information with Eric, and it wasn't intended to be shared or used for anything except his personal knowledge of what he made.
LDF didn't test the Artisanal and doesn't need to - It was tested and approved by the distillery and its French lab, then re-tested independently.

I feel like Jung and the june bug, someone just walked in out of the blue and handed me a bottle of L'Artisinale that I left at his house. I'd forgotten about the night I stopped by and showed it to him, told him about it, cracked the seal, we each had a small drink and I put the bottle in his kitchen cupboard, it sat there untouched til his wife threw him out so he gave it back to me. It smells nice, like fennel.

"It depends". If you have a beta-thujone rich phenotype of A.a. and you can't put enough of it (depending on your process) in, yes. Otherwise, no.

It's a crap shoot, actually. That's what Claude Alain Bugnon was telling me: it's darn hard to predict what the b-thujone content test results are going to be no matter what you know about the recipe, and even the smallest process change can influence the results.

Nope, only whether it is legal or not...a major consideration if you actually make absinthe to commercially sell...
Officially Artisanal is a legal product as are others that have been retested officially or unofficially. It's a matter of understanding what you are making beyond the taste and whether a laboratory is to be trusted or not.
Not a consideration when you make HG.

The TTB has detected calamus in at least 3 absinthes that don't use it - go figure.

That calamus thing threw me for a loop too, absinthe that has only a few traditional herbs and no calamus has been rejected for containing calamus.
How accurate has your independent tester been Peter, or if that is impossible to know, how accurate do you think they are compared to the laboratory that said L'Artisinale was good to go?
Who do you speculate is more correct?

What is TTB testing for? They aren't testing for calamus directly anymore than they test for wormwood. What marker are they testing for? It may be in other herbs, just as thujone is in sage. It would make sense if they were testing for β-asarone but they could be checking for a different compound.

That's what I'm thinking as well. Maybe something in Angelica creates a false positive for Calamus.

Asarone from calamus is related to hydroxymyrystic acid in angelica root which is related to myrysticin in nutmeg (another alleged hallucinogen monitored by TTB). Their molecular formulas are very similar:

I get the impression it was supposed to be huge and I was supposed to get stung in the process of revealing it. I was told last year, in December I think, I guess he got tired of waiting for me to leak it, I forgot to, plus he asked me not to.

Someone better have some fun, the same friend that brought me the L'Artisinale just brought me the silver spoons I gave him, too.
So. . . I poured a glass, mainly because every time I opened the liquor cabinet, I could smell it. Still green, but very pale, smells like good fennel, smells aged, the louche is slow to form and becomes completely opaque. Tastes like fennel, then anise, I don't taste wormwood or much else.

Fortunately, I borrowed my Head Nurse™'s knee pads...

However, since the glue pulled away some bits of the subfloor, I have to apply a liquid underlayment and I still have kitchen to chisel away at and patch. The rest of the downstairs is carpet, so at least that piece is only a couple of hours worth of work... I can tear through carpet pretty quickly ;)

Can't make flambeed bananas all that often, and it's worthless as a windscreen wiper fluid anti-freeze and to clean windows: too much sugar.

It was said that the distillation was 'burnt' when the alambic backed up during the lunch hour, and puked out a colored distillate and how someone saved the day. Funny that the same colored and flavored distillate has been seen since, and not only at Pernot and not by the same distillers.

Please, if anyone can expound on this, I'd love to know the details, since I obviously wasn't there and don't know nothin' 'bout birthin' no absinthes...

The way I watched it happen, the still was loaded and the owners walked away, by the time the tails came out they were running red, is that a new process that was stolen from you? It would explain a lot.

Not much that contains ethanol. But I just had to drink a glass of 1797 just to make sure that it wasn't sinkable (it wasn't, whatever process fuckup happened when it was made). And yes, that bottle is from that run.

You'd be surprised how much age can mellow things out.
