Definitely, ya should get both. This actually kinda grate when ya may choose between an excellent traditional Montpellier and excellent modern Pontarlier and ya should choose both instead of bogglin' yer mind around some crapsinths or absinthes-wanna-be's.

Pacifique is Montpellier at its best. If it were available in a heyday, it could rival Junod. Cheryl's extraits are Pontarlier with modern approach.

Ya can take Pontarlier recipe, add a twist and arrive at Walton Waters-delicious. Or, ya can skrew Pontarlier, add an unnecessary twist and arrive at Marteau-pernicious.

So Tish and I stopped by Bellisfair Mall and picked up a bottle of Pacifique.

We hadn't tried any since the first run, and we both thought this latest batch was incredible...the same complex and nuanced flavor as the original, but a bigger louche, and fuller mouth feel, with flavors that popped more.

The answer is...

Now that there are GOOD absinthes available, why bother drinking the stuff we considered crap even when all we had to drink was crap.

8 years ago Pacifique would have been touted as the holy grail... I only wish we could compare it to the infamous "lab samples" from wayyyy back when that were provided by a certain "Chemist".

I tried those.

They were certainly the holy grail back in the day, but Pacifique today is in the same league, or better, and it's readily available.

I'm having a glass now, of the older good batch. It's definitely the most deftly balanced US absinthe on the market. Love that fennel too. Pacifique is scrumtrulescent.

If Ludwig's wants Voyager or Pacifique, they can easily get it from Tempus Fugit (especially since they already stock TF products). I know there is stock in California ready for distribution.

If Ludwig's wants Voyager or Pacifique, they can easily get it from Tempus Fugit (especially since they already stock TF products). I know there is stock in California ready for distribution.

Talked to the owner today and he claimed he'd never heard of Tempus Fugit. He promised to look into it when he got back from vacation. I get the feeling I'll be reminding him.

Hey Gassy...any hope in selling to some Denver markets. Not sure how the tax representation is in Colorado but seeing the number of microstills moving here in the past few years assume that production taxes are low. Plus, we do have the world's largest liquor store...if it stays open. Guess there was some concerns in them buying liquor for both of their stores under one license and splitting the hooch between the two stores. DaveCo is the store I am talking about if you want to look into it.

I hope so. It is pretty much up to our wholesaler, Tempus Fugit Spirits (www.tempusfugitspirits.com), why not drop them an email requesting it? I sure wouldn't mind. Until then your choices are:
Catskill Cellars, Astor Wine & Spirits, and DUNY for deliveries. If you haven't had any, I'll bring a couple of bottles to the LoucheFest this September.

(didn't know where else to put this) [and it's prolly old anyway, but...]

Was watching an episode of 'drinking made easy' last nite..they were in Seattle and they plugged/used Voyager gin and Pacifique absinthe in a couple of the drinks they made. I thought it was pretty cool seeing it on tv. Ok, back to your regularly scheduled programming.
"Yes," said the girl. "Everything tastes of licorice. Especially all the things you've waited so long for, like absinthe." E.H.
