This has been asked before at feeverte. Unfortunately Paris is not absinthe central. Most frenchies still look down their snoot at you for asking absinthe "absinthe"... There was mention of one shop, you'll have to do a search at feeverte for the name and addy (or else PM Pierreverte).
I recall the selection being rather slim (ie. comparable to any online vendor).
