There is a strange phenomenon regarding absinthe. HGs are better than commercial brews.

This is what every poll of absinthe experts tells us. Up in the list are some commercial products like Un Emile or Francois Guy, but there is always the caveat that the non plus ultra are some (usually unobtainable) HGs.

Why is that? One does not see whisky people praising home-made whiskys, or, perish the thought, wine connaisseurs praising home-made wine. Au contraire.

There is an exception for home made beers. Home brews are usually very good, but not really superior to the top quality beers.

I doubt that your regular HGer has access to wine alcohol, to be able to reproduce faithfully what Pernod did.

So why are HGs superior to absinthes brewed by distilling houses with Distilling Masters and hundreds of years of experience, guided by guys like Peter and Ian, who know all the old recipes and pretty much everything worth to know about absinthe?

Pernot does as he pleases, he is making the old family recipe. The blanche and Sapin are just tweaks of that recipe.

Much like the outstanding microbrews, I think it's the feeling put into the product. The mechanics of it is important, but it's the love, passion and care that make something great. I'm sure it's the same with the HG .... Can't wait to try some.

#2... Emile, François Guy, Kubler, Segarra are all VERY fine example of commercial HG's... how's that?

#3... I've touched on this before; personal HG's are just that... personal. We have about 6 or 7 extremely talented HG crafters on board here who put in a lot of time and effort (and money) to their craft... I'm sure as much as the commercial HG crafters do. The difference? We have a personal relationship with these folks and they listen very, very closely to what the pulse whispers. It's more of an intimate community with the smaller, independent HG crafters. We're fortunate to have reps from Emile on board and they listen to us and divulge information. and that's what it's all about... sharing. I doubt anyone here personally knows anyone from Segarra, Kubler or Guy... if they do, then I stand corrected. It's much like the difference between Walmart and Jack's House-O-Wares. Walmart appeals 'nationally' to a broad audience where Jack's House-O-Wares appeals to us locally because he knows his client base pretty well and has devoted time in listening to what they have to say and offer and then adjusts his inventory accordingly... therefore the perception becomes this: Jack's House-O-Wares is better because his store is more intimate and sensitive to the community for which he serves.

#4... If you're going to come here just to stir up shit, please do yourself a favor and don't. You'll have so many CC members up your ass you'll need a Czeckerland method enema to get them out!

#5... Mind the advice of Ms. Peeps and turn the 'tone' controls down! Like now.

The whole premise of this thread is nonsense. Why is an absinthe that is crafted with passion for knowledge and attention to quality, better than one mass produced by corporations driven by profit? Duh!

OK, back on topic. I am not a huge fan of Segarra & Emile's due to their simplicity. Will I order them again though, YES. Sometimes I like simple, and they are both obviously excellent absinthes. But I also like a little more complexity, flavor, and yes, star anise as well. That's where Kubler, NS, La Fee, etc. jump in. However, out of those only Kubler is what I would call smooth, obviously due to the fact that it's distilled. That's where many/most of the HG's move in -- to fill in the gap of well-balanced, herbally complex, and flavorful distilled absinthes.

But ya think they call him McGregor the absinthe distiller? Nooo....
