I'm just guessing it's only a matter of time before we see a premium American absinthe that could compete with Jade. But it's just a guess.

Hopefully not. There's already enough Absinthes from over there.

There's already one US-made distilled absinthe that we might see soon, though at this point it's anybody's guess as to whether it will be good.

I don't want to create too much hype for the maker since none of us know if the product has been approved or what it's like, but they did mention it in a video that is publicly available on the webternet so they clearly don't mind people knowing about it...

I don't want to break any rules by posting it here though.

absinthe out there already?
Why is it not being marketed,
shipped and sold already then?
How can one legal make something
but not legally sell something here?

There are several American distilling companies that have already prepared an absinthe, have/and/or are awaiting TTB formula and/or labeling approval.

Even after getting all the right permits, equipment and location setup, one still has to make the product, send it off for testing, and make sure the labeling meets national/local guidelines.

Plus it takes a while to tweak it and produce enough aged stock to go to market.

My guess is that these particular established American distilleries have almost no proper notion of what a quality absinthe should be, let alone following any protocols for proper manufacture and aging. FWIW, all of them are using crap absinthium suppliers (i.e.,SF Herbs, Frontier, etc.) and I have no idea where, if any, pontica they are sourcing.

I'd be curious if that's also true for St. George spirits. They portray themselves as fetishists for rare top notch ingredients in their other products, so I'd be surprised if their absinthe took the easy route and used that chopped cardboard labelled as Absinthium from Frontier or SF Herb co.

It wouldn't surprise me, however, if all other established US makers were just using shit herbs and not following proper methods of manufacture.
