The thing about Pacifique is that it has some qualities that make me think of preban. You can tell what it would taste like if you could age it 90 years.

I am talking about the process how Starka is made. It is called in Polish "maderyzacja", so might be confusin'.
FWIW, you put Starka in oak for 5-15 yrs in 12 degrees Celsius, but some part of it is kept in 40-50 degrees Celsius for three months, what lessens the time of aging by 1/3.
If talking about wine, sometimes grape wine is added to the final stage to mellow much more. All in all, age some in oak for 10 yrs and the rest via "maderyzacja" and the result is just as that of 15 yrs. Quite young, though, but still.
