I kind of expect it to go like sushi.
There was that sushi craze that swept this country in the 80s, and for like two years there was a sushi bar on every third corner. Then it died off, but it didn't go away. A measurable percentage of the population got hooked for life on the stuff, and there are still sushi bars in every town. It was the people who really liked it, deep down, when nobody was around to see them eating it. We're still eating sushi.
People like us will always drink anise drinks. The coming trend will bloom, flower, go to seed, and wither. But in its wake I expect to find a lot of new lifetime absinthe drinkers.
Ona cuz it don't suck like sushi.
