A bottle of Jacob's creek reserve Shiraz with dinner (normally I stay away from Shiraz, but it got such good reviews I had to try it).
A couple few Dogfishead 60 minute IPA's... and then I got bored.

Into the archival cupboard I went. This time pulling out a bottle I'd been saving for special occasions...

It's a nicely aged green, perfectly clear, with a lemony-anise scent. It louches relatively quick and appears to be on the thicker side. I can smell it from across the room (did I mention YUM?).

This is the most well balanced absinthe I've ever tasted. The only thing that stands out is whatever base alcohol was used... possibly a rectified brandy, or grappa. I'd suggest toning it down just a notch to achieve a blissfull harmony of flavors.
The only negative thing I can see, is that the bottle is almost empty.
