Another little sip of Leo's 11 last night. Damn, I love that pisco. I never sugar absinthe, but this adds a natural sweetness in both the nose and in taste that really softens everything. Got to put my Feeler™ out in GA for some of this xit.

Interesting, and really tasty xit, that Leopold's #11.
If I had the farm to bet, it would be that it never xows up in Washington, though.
De Proef Les Deux Brasseurs, an amazing blonde Brett ale collaboration by the brewmasters of Allagash, and De Proef breweries. Great barnyard funk, definite yeast haze, flavors of pear, apple, pineapple, and graham cracker, with very lengthy finish that dries out nicely from the spicy Hallertaus. Really creamy body, and despite the complexity, almost flawlessly balanced.

Leopold Bros #10.
This absinthe is pretty tasy as is, but would probably be improved with an even shorter steep time for the coloration herbs. I agree with Prole that there's a bit too much evident chlorophyll, and also that the Pisco base could use a little more rectification to allow the floral aspects (I dig the lilac) to shine through.
Great effort, and it's nice to see a commercial distiller who responds so positively to constructive criticism, as is evidenced by the evolution of Leopold Bros., since batch four.
