I decided to double the recipe for tomorrow's distillation. There is now almost 200 liters of alcohol and herbs macerating in the still. For those of you who contributed herbs, thanks, they are in this batch. I'm gonna fire up that sucker at 8:00AM PST for those of you that care about these things. I'll post some pics on my blog on Monday or Tuesday.

G&C and myself colored the absinthe last week. During today's second gin bottling, we opened up the absinthe tank and took a sniff-n-taste. All appears very well with the absinthe. We will probably have about 190 liters of 62% absinthe when it comes time to bottle in a month or three.
BTW, the gin bottling went fanstastic (thanks G&C), we shaved an hour off the time to "proof" the spirit for bottling. The actual bottling only took about 1.5 hours. Tomorrow's clean-up day.
