At last. I am in love , life is good.
Did the first E.Ts have such a nice bottle? A lead pull strip under a black and silver shrink wrap with a little embossed gold seal on top? Is that an absinthe leaf on the seal or is that a generic seal?

I don't have a bottle, but I'm guessing it's a grape vine, not an absinthium leaf.

How would one get in touch with such a person again? I'm drunk on MLK Day.

Ours came yesterday. Will be louched tonight (maybe my fountain will show up today so it can be done properly).
We had some #8 last week & took photos, so tomorrow I hope to post a side-by-side comparison of the 8 & 9.
Cheers!

I'm just finishing the 1st glass of the ET #9,

although I'm "low on the learning curve" I'll still try to give MHO. A quick nip neat rewards one with a burst of herbal flavors , while the alcohol is definitely present it is not overpowering.
Let's start with the louche since it is the first thing you see. Lovely, very nice gradient going from almost clear at the bottom to a nice opalescent green in the center and then a very pale bluish white at the top. As I'm "new" I still like a nice louche.
Now the flavor, all sarcasm aside I do wish I had a better grasp of the different herbal tastes but I'm learning. The anise taste is present however not overwhelming. The taste is well-balanced with floral ( possibly angelica?)and citrus (poss. lemon balm?) overtones. It is much less astringent than the #8. It has a nice mouth "feel" and the bitterness is minimal.
I louche at a ratio of 3:1 with 1 lump of sugar. So I shall end this and have another glass.

Just thought I'd mention that I like the #9 much more than the #8; it is more balanced & has a nice citrus note. I even had a 2nd glass, which I've only done twice before!

#9 shows much improvement over the
last I had, #5.
As said, less astringent, mellower, more
smooth, more balanced.
I lit a fire, killed the whole Mayor's Share
bottle, probably 6-7 oz.
Had a phone call from Louche Fabrik.
#9 was the lube on a good night.

QUOTE(Maturin @ Jan 22 2004, 09:31 PM)
In truth, the correct water ratio all depends on the alcohol content and the method used to make the absinthe. I found ET #9 to be best at 4:1, but 5:1 was too thin, but a recent hearty Austrian HG I had required 5:1 to achieve balance. One masters HG needs at least 5:1 before you are enveloped by the full weight of it's awesomeness.
3:1 is best reserved for Butty's absinthes or any absinthe 50% or below (e.g. they're already diluted more, so you need less water).

Thanks for the info, I'll give 4:1 a try. As I said I'm on the learning curve and any lessons are appreciated (as long as they aren't bad ones learned the hard way). Also, if it is Melissa that adds the citrus again I stand corrected, I'm learnin'!!

It's a lemony, minty taste...
Good wormwood can also add a orangy-citrusy funk to absinthe.

I never thought of corriander as adding a citrusy aspect. It just seems to add spicy and grassy.
Do you mean in the macerate, or as a coloring herb?

Jan 25 2004, 08:24 PM
Depends on which kind of Coriander. The kind used in beer is peppery, while the other kind that's easier to find smells like lemons to me. I've had a few absinthes using that kind, and they were all too citrusy.
I've had one kind of wild harvested wormwood with lots of flowers, and that can definitely seem citrusy. That stuff is tough to manage.

Ah -- I thought it was completely different, given that everyone was calling
Melissa officinalis "Melissa" around these parts.
In Dutch, it's called "citroenmelisse" (Lemon Melissa). And it's quite a pest in my garden, given that it's spreading *everywhere*.

My review of the #9 blanche
- Rounder, Fuller, better than previous attempts. It's got a nice louche. There's some up front anise flavor, with a nice fennel weight to carry it through. A small hint of the usual ET "sweet-funk" persists in this sample, but it's weaker and better balanced than previous batches. Not much power to the wormwood, and a bit more anise would balance the flavor.
So far the best ET I've tasted.
